Snap Pea Salad | Gluten-Free, Dairy-Free | BoneCoach™ Recipes


TOTAL TIME: 10 minutes prep (+ 30 minutes marinate)


4oz (113g) snap peas, thinly sliced on the diagonal

1 cup (250ml) cucumber, thinly sliced

6-8 radishes, sliced into thin matchsticks

2 tbsp (30ml) fresh lemon juice

2 tbsp (30ml) fresh-pressed extra virgin olive oil

1 tbsp (15ml) freshly chopped dill (or 1 tsp dried dill)

1/2 tsp (2ml) sea salt

pinch black pepper (optional)


Place all the ingredients in a bowl and toss to combine!

Let the salad marinate for 30 minutes before enjoying.

Salad will keep in the fridge for 2 days.
