SERVES: 2

COOKING TIME: 20 minutes

Ingredients

1 lb (454g) wild cod or haddock

1/4 tsp (1ml) sea salt

2 tbsp (30ml) extra virgin olive oil

5 cloves garlic, finely minced

2 tbsp (30ml) freshly squeezed lemon juice

10 fresh basil leaves, thinly sliced into ribbons

Directions

1) Pat dry the fish with paper towel. Season with salt on either side.

2) In a 8.5x4.5" oven-proof casserole dish combine the olive oil, garlic, lemon juice and basil. Coat the fish on either side with the marinade and let it marinate for 10 minutes.

3) Preheat oven to 425F. Bake fish in heated oven for 10 minutes or until fish is done and flakes easily. This dish would pair nicely with BoneCoach Roasted Green Beans.
